Almond Butter Brownies- Grain-free, Gluten-free, & Vegan!

Since it has been many months since a new blog, I thought I would reward you all for your patience…

One of our best sellers here at Gluten Free Goat Bakery is our grain-free almond butter brownie and today I will share our secrets with you!

This is a great recipe for those of you who are just starting a gluten-free, or grain-free diet since it has very few ingredients and the preparation is very simple.

 

Almond Butter Brownies

-Gluten-free, Grain-free, vegan, and soy-free!

(I have put these ingredients in a specific order so that mixing is easier)

 

1/4 cup Organic Cocoa powder

1/2 tsp Baking soda

1 Cup Roasted Almond Butter

1/2 cup Soy-free chocolate chips (i.e. enjoy life)

1/2 cup Organic Evaporated cane juice

1/4 cup Organic Maple syrup

FLAX EGGS:

1/4 cup Water

5 TBSP Organic Ground Flax Seed Meal

 

Directions:

Prepare flax egg by thoroughly mixing water and ground flax with spatula in a small bowl and let sit while you prepare the batter.

Combine all other ingredients in the order listed and use a stand mixer or an electric hand mixer to combine.  *START at a low speed to prevent cocoa powder from exploding*  You can mix by hand but it is a pretty difficult task so only attempt if you haven’t been to the gym for a week and you feel like you need work on those arms!

After ingredients are thoroughly mixed, slowly mix in the flax egg.  It is important to stop the mixer the moment the flax is combined so that you don’t have any water/oil separation.

Press into the baking pan of your choice or you can distribute them into a muffin tin (use a silicon muffin pan or use paper liners!) I recommend using approximately 1/4 cup of batter for each brownie.

 

Bake at 350 for 9-13 minutes (depending on how crispy you want your edges).
