Potato Leek Soup

My friends know that I make a lot of statements like “This is my all time favorite______” and “This is the best _______I’ve ever had in my life” but when I say that Potato leek soup is my absolute favorite soup to make/eat, I REALLY TRULY MEAN IT!

Ingredients:

5 Medium Potatoes (diced)

4 Leeks (chopped)

3TBS Unsalted Butter

2 Cloves Garlic (diced)

4 Cups Stock ( I used Free Range Chicken Stock)

1 TSP Sea Salt

Directions:

Add the Leeks to the soup pot and sauté with the butter and garlic until the leeks are translucent. Add the potatoes, salt, and stock and bring to a boil. Reduce heat and simmer until the potatoes are tender. Turn off the heat and use an emersion blender to liquefy the soup. Turn the stove back on and simmer for another 10 minutes.

If you have fresh dill, you should throw some on top before you serve the soup. It’s a very tasty addition.

So delicious. So easy. I love leeks.
